Parmesan Zucchini

I bought some yellow squash at the Farmer's Market recently and remembered making zucchini this way in the past - so tried it with the yellow variety as well! Yummy!

1/3 c. bread crumbs
1 egg, beaten
1 tsp. Italian Seasoning
4 small zucchini (or yellow squash) quartered
1/4 c. Parmesan cheese

Combine Parmesan, bread crumbs and seasoning in a shallow bowl.

Dip squash in egg, then in crumbs.

Place on cookie sheet and bake at 450 for about 20 minutes. Serves 3-4.

Your growing season is so much earlier than ours! I was shocked you could get squash already at the farmer's market until I thought about your geographical location. Enjoy! (And I'll enjoy it now vicariously. lol)

Can't wait to try this. We've been growing squash this year, and I'm always excited to try new ways of cooking it. I can't believe I haven't thought of trying this before.
