Double Chocolate Snack Cake
I hadn't make this cake in ages until recently when I needed a dessert and didn't have eggs! This has always been my standby recipe when there aren't enough eggs for something else!!

Double Chocolate Snack Cake

1 2/3 c. flour
1 c. brown sugar
1/4 c. cocoa
1 tsp. baking soda
1 c. water
1/3 c. oil
1 tsp. vinegar
3/4 tsp. vanilla
1/2 c. choc. chips

Combine all ingredients except chocolate chips and pour into prepared 8x8 baking dish. Sprinkle with chocolate chips and bake at 350 for 35-40 minutes.

I just love those quick desserts - and I'm so glad to find another one I don't need eggs for!

Last night as I was scrambling for something - I found white chocolate chips in the freezer & made homemade chocolate covered pretzels. So easy!

I love this cake recipe...but I have never had it with the chocolate chips on top! YUMMY!!!!
This recipe was popular during the great depression because it does not require eggs or milk... also a great cake for those with milk or egg allergies. Thanks for the chocolate chip idea.. double the chocolate... never have too much chocolate!

I love this! So easy and quick, and it is so chocolaty. I adapted it so that I could eat it (I have a gluten/wheat intolerance) and used gluten free flour. Still turned out great. Thanks for enabling me to indulge :)

We love this snack cake in our house! My college roommate used to make it during finals week. Now I make a gluten free version for my egg, dairy, wheat and peanut allergic son.
