Cynthia's Vanilla Muffins

I'm always on the hunt for new muffin recipes and this one caught my eye from the Mitford Cookbook. They were yummy - though I might cut the sugar down next time, they were pretty sweet. Emily and Rachel loved them - probably because of what I just typed - they were pretty sweet! :)

These reminded me of some vanilla cookies that my mom loves only in a muffin - mmm!

Cynthia's Vanilla Muffins

4 c. all-purpose flour
1 Tbsp. baking powder
2 c. sugar
1/2 tsp. salt
2 c. milk
2 eggs
1/2 c. melted butter, unsalted
1 T. vanilla extract

Combine ingredients and divide into prepared muffin tins. Bake at 400 for 15-20 minutes. Makes 24 muffins.

I love muffins!!! Even better than cake!! In the fall and winter I make them all the time. I freeze some and eat most. I love the smell of them cooking and so thank you for another recipe to make. Cut down on sugar and use powered milk and I bet it cuts the calories too. Thank you agian.
