Cookie Recipe Update

I have been on a cookie-kick lately. They are just what I'm craving and since I'm still eating for two (nursing) I don't mind the extra calories!

Remember my request for cookie recipes? I've tried a couple and wanted to let you know how they have turned out:

This recipe from Smitten Kitchen was oh-so-good! The toasted and then chopped/powdered nuts were delicious!

I also had two friends submit this recipe and they were scrumptious as well! These cookies were the fluffiest and most beautiful chocolate chip cookies I've ever made! Anyone know if you can make your own instant pudding mix - after lots of internet searching it looks like all the recipes have to be cooked. But, I wondered if you could use the mix in the cookies and have it work?

I also tried M&M cookies for the first time ever and they will be a definite repeat around here! We had an abundance of M&M's from CVS sales the last month or two. I got the recipe from my friend, Amy - but here is one that looks almost identical. I did half butter and half shortening and also stirred the M&M's into the batter rather than putting them on top. This made for some very yummy cookies!

I make that recipe from AllRecipes and just love it. I haven't been able to find a way to make the vanilla pudding mix, but I think I have a recipe for chocolate pudding mix (but it has to be cooked). Regardless, that recipe is great for switching up. I love the chocolate pudding with butterscotch chips or something a little different or the chocolate pudding with peanut butter chips. I might have to make some of these- yummy!

Hey Monica,
I love cookies!!!! I once told a friend i thought they (cookies) were good for your moral. You know lift the spirits, that sort of thing. We laughed and joked in a very silly way that cookies were good for you--morally. She made a little picture with this statement and cookies and tea and coffee. She framed it and gave it to me as a birthday gift!!! It sits in my kitchen as a fun, silly reminder!!! Like your mom i find it amazing and wonderful you want to make cookies!!!! tammyp

Mmm...those all sound good. I recently found my favorite chocolate chip recipe in a Southern Living cookbook I was given for Christmas. I don't normally like a semi-crunchy cookie, but they were delicious!!

I missed your post about the cookies, but I want to share a recipe that is really great for nursing mothers. These have molasses and therefore iron, which is a benefit to a nursing /recovering from pregnancy mom. I love these cookies, and hope that you enjoy them as well.

Colossal Molasses Cookies

1 1/2 cups white flour
1 1/4 cups whole wheat flour
3/4 cup oil
1/2 cup honey
2 tsp vanilla extract
1 cup raisins
1 cup oats
1 tsp baking soda
1/2 cup dark molasses
2 eggs
1 cup walnut halves (optional)

Preheat oven to 350. Combine dry ingredients except nuts and raisins. Combine liquid ingredients in a separate bowl. Add liquid ingredients to dry ingredients, then add nuts and raisins. Drop 1/4cup of batter onto a buttered baking sheet. Flatten slightly. Bake 12-15 minutes til lightly browned.

YUMMY! Cookies sound really good right now!!! Brian LOVES chocolate chip cookies so I will be trying these in the near future. If you come across good peanut butter cookies let me know.

Have you ever tried the Cottage Living's Oatmeal Cream Pies? They are so, so, so yummy! They use a ton of butter, so economical would not figure into this recipe, but they are worth it! My husband's coworkers are always requesting them. I could start a business...

I put vanilla pudding in my oatmeal cookies and they are the best. I will have to try them in my chocolate chip ones.
