Potato Soup

This is my favorite soup recipe! We love it and I hope you will enjoy it too!

2 c. chicken broth or water
2 c. diced potatoes
1/4 c. diced onion
salt, pepper and garlic powder to taste

Bring the above ingredients to a boil and simmer until potatoes are tender.

In a microwave-safe bowl, combine:
2 c. milk
1/4 c. flour
1/4 c. butter or margarine

Microwave on high for four minutes whisking half-way through. Stir into soup.

Stir in 2 c. shredded cheese (cheddar or Mexican blend is what I use)

Serve when cheese is melted and combined.

looks great--I have a cold and chicken soup sounds good, except I might have to leave some of the cheese out!!

mmmm..one of my favorites! We do this as a "stuffed baked potato soup" with cooked bacon and onions for the beginning of the dish, and use storebought hashbrowns (cubes) for the potatoes. Goes fast with that help!

My family LOVED this recipe (I added carrots and two slices of bacon, and tripled the recipe).
My husband told me it was the best potato soup I've ever made, which sounds like a compliment until I remembered that I have never made potato soup before.
And, it cooked up very quickly (maybe 30 minutes?)

Thanks for this wonderful recipe. I read it right at lunchtime a few days ago and I was thrilled to find I had all of the ingredients on hand! I whipped up a batch, and it was delicious! My 4-yr old daughter had 2 bowls!
