Hayrides and Pumpkin Pie!

We had a fun evening out last night sponsored by our church celebrating Fall! This photo was taken on the hayride - Emily and Rachel's first one! It was a lot of fun!

I brought a pie for the pie contest and (gasp) was surprised it won first place. I have shared the recipe before (we won second with the same pie last year) but thought I would share it again for any new readers who might enjoy it! Here is the best part - I won a gift certificate to a local spa for a facial! Very fun.

Pumpkin Pie

One graham cracker crust

1-15 oz. can pumpkin
1-14 oz. can sweetened condensed milk
1 egg
1 tsp. pumpkin pie spice
*Mix these ingredients together and pour into crust. Bake for 15 minutes at 425. Then reduce oven heat to 350.

1/4 c. brown sugar
1/2 tsp. cinnamon
2 Tbsp. flour
2 Tbsp. cold butter
3/4 c. walnuts
*Mix together flour, brown sugar, and cinnamon - cut in butter. Stir in walnuts. Sprinkle over the pie when you reduce the oven. Bake at 350 for 40 minutes or until a knife comes out clean.

How many entries? I don't actually know though there were 6-8 pies gathering when I got on the hayride.

Just wanted to let you know that I tried out your recipe yesterday. It was a hit with our Austrian friends, who do not usually eat "pumpkin" desserts. Because we cannot get canned pumpkin, we cooked a small pumpkin and pureed it in the blender - we ended up mixing the pumpkin batter in the blender, and it worked great.
