Chicken Burritos

My friend, Heather, made this for dinner when I was at her home recently and it was SO good! I've made it once since then and while I did not add enough seasonings, we liked it and agreed I could add more next time!

Note: for leftovers, I made this into quesadillas and it was delicious that way too!

Chicken Burritos
1 1/2-2 pounds chicken tenders (thawed) - I used chicken breasts and just sliced them up into smaller pieces
1 can undrained pinto beans
1 1/2 tsp. cumin
Seasonings to taste: salt, pepper, garlic powder, onion powder and red pepper

Place all ingredients in the Crock Pot on high for about 3 1/2 hours. Serve with tortillas, cheese, lettuce, sour cream and chips and salsa.

Oh yum...I've made something similar in my crock pot. It had salsa poured over the chicken for flavor.

Monica,

Thanks for sharing this recipe--no red meat and no tomatoes means I'll have to give it a try!
